Step 1Brake and tear off the stem before pulling the string; discard it.

Step 2In a pot with boiling water, drop in the snap peas and blanche them for 1 1/2 minutes.

Step 3When time is up, using a slotted spoon, transfer them in an ice bath; soak for 2 minutes.

Step 4Remove from the col water and place them on a cutting board or plate lined with paper towels to absorb the excess water. Place them on a baking sheet, leaving space between each snap peas, and transfer to the freezer. When frozen, place them in a re-sealable freezer plastic bag and return them to the freezer until needed.
