This is my absolute favorite way to make bread & butter pickles. They are easy to make, and have a deep rich sweet/sour taste that will have you coming back for more. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 pound cucumbers, pickling variety
  • 1 tablespoon salt, kosher variety
  • 1/2 medium yellow onion, thinly sliced
  • 1 cup coconut sugar, light variety
  • 1 cup vinegar, white variety
  • 1/2 cup apple-cider vinegar
  • 2 teaspoons mustard seeds
  • 1 teaspoon celery seeds
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon black peppercorns

    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Thickly slice the cucumbers, add to a bowl, and toss with the salt.
  • Step 4
    Cover and add the pickles to the fridge for 1 hour.
  • Step 5
    Remove from the fridge, and rinse with water.
  • Step 6
    Add the cucumbers to a bowl, and toss with the thinly-sliced onions.
  • Step 7
    Place them into one large container, or two regular mason jars.
  • Step 8
    Take the remainder of the ingredients, place them into a small saucepan, and bring up to a simmer.
  • Step 9
    Allow the brine to cool for 30 minutes, then pour it over the pickles.
  • Step 10
    Seal the jars, and place in the fridge for 24 - 48 hours before serving.
  • Step 11
    Chef’s Note: The pickles should last 3 – 4 weeks; however, I do not believe they will last that long.
