This is my absolute favorite way to make bread & butter pickles. They are easy to make, and have a deep rich sweet/sour taste that will have you coming back for more. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1 pound cucumbers, pickling variety
- 1 tablespoon salt, kosher variety
- 1/2 medium yellow onion, thinly sliced
- 1 cup coconut sugar, light variety
- 1 cup vinegar, white variety
- 1/2 cup apple-cider vinegar
- 2 teaspoons mustard seeds
- 1 teaspoon celery seeds
- 1/2 teaspoon ground turmeric
- 1 teaspoon black peppercorns

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Thickly slice the cucumbers, add to a bowl, and toss with the salt.

Step 4Cover and add the pickles to the fridge for 1 hour.

Step 5Remove from the fridge, and rinse with water.

Step 6Add the cucumbers to a bowl, and toss with the thinly-sliced onions.

Step 7Place them into one large container, or two regular mason jars.

Step 8Take the remainder of the ingredients, place them into a small saucepan, and bring up to a simmer.

Step 9Allow the brine to cool for 30 minutes, then pour it over the pickles.

Step 10Seal the jars, and place in the fridge for 24 - 48 hours before serving.

Step 11Chef’s Note: The pickles should last 3 – 4 weeks; however, I do not believe they will last that long.
