Ingredients
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 cup lemon juice, fresh
- 1 cup vegetable oil or safflower oil
- 2 1/2 cups finely chopped parsley
- 1 cup finely chopped onion
- 3 1/2 cups finely chopped tomato
- 1 bunch green onions or 1 tablespoon mint
- 1 - finely chopped cucumber ( optional )
- 16 ounces wholr grain bulgur wheat

Step 1Pour 16 oz. Bulgar wheat into a large tea strainer, rinse and drain wheat, put wheat in a very large bowl.

Step 2Add oil, lemon juice, salt and pepper stir well.

Step 3Add chopped veggies, mix well, cover and refrigerate at least 3 hours, Stirring a couple times.

Step 4Add 1 bunch green onions or mint, Chopped cucumber if wanted. mix well.

Step 5Return to refrigerator for 1 more hour. stir and serve
