Green Beans with a Twist!
1 lbfresh green beans
1 1/4 tspolive oil
1-2 ozprosciutto (you can use more or less to your liking)
1 clovegarlic, minced
1 tspfreshly chopped sage
·coarse salt and freshly ground black pepper, to taste
1/4 cpine nuts, roasted
3/4 tsplemon zest, grated
1/2 tsplemon juice
How to Make Green Beans with a Twist!
- Boil the green beans in a medium pot of salted water for about 3-4 minutes, or until just tender. Drain.
- Heat a medium-sized skillet over medium heat and add 1/4 t. of the olive oil. Once it's hot, add the prosciutto and cook until crispy - approx. 2-4 minutes. Set aside to drain on paper towels.
- Quickly wipe out the skillet, return it to medium heat, and add 1 t. of olive oil to heat. Now you can add the green beans, garlic, sage, salt and pepper to taste. Cook until the beans begin to brown up a bit.
- Add your roasted pine nuts, prosciutto, and lemon zest and stir together. As you serve, you can squeeze a bit of fresh lemon juice over it. Enjoy!
