I found this yummy green bean recipe on a Maltese cooking site. It's really simple to make and makes for a delicious side dish for any meal. *Note - Before starting the beans, gently toast your pine nuts in a small, dry skillet for approx. 5 minutes over medium heat - or until lightly browned. Enjoy!

Ingredients For green beans with a twist!

  • 1 lb
    fresh green beans
  • 1 1/4 tsp
    olive oil
  • 1-2 oz
    prosciutto (you can use more or less to your liking)
  • 1 clove
    garlic, minced
  • 1 tsp
    freshly chopped sage
  • coarse salt and freshly ground black pepper, to taste
  • 1/4 c
    pine nuts, roasted
  • 3/4 tsp
    lemon zest, grated
  • 1/2 tsp
    lemon juice

How To Make green beans with a twist!

    Boil the green beans in a medium pot of salted water for about 3-4 minutes, or until just tender. Drain.

    Heat a medium-sized skillet over medium heat and add 1/4 t. of the olive oil. Once it's hot, add the prosciutto and cook until crispy - approx. 2-4 minutes. Set aside to drain on paper towels.

    Quickly wipe out the skillet, return it to medium heat, and add 1 t. of olive oil to heat. Now you can add the green beans, garlic, sage, salt and pepper to taste. Cook until the beans begin to brown up a bit.

    Add your roasted pine nuts, prosciutto, and lemon zest and stir together. As you serve, you can squeeze a bit of fresh lemon juice over it. Enjoy!
