green beans with a twist!

I found this yummy green bean recipe on a Maltese cooking site. It's really simple to make and makes for a delicious side dish for any meal. *Note - Before starting the beans, gently toast your pine nuts in a small, dry skillet for approx. 5 minutes over medium heat - or until lightly browned. Enjoy!

Ingredients
- 1 pound fresh green beans
- 1 1/4 teaspoons olive oil
- 1-2 ounce prosciutto (you can use more or less to your liking)
- 1 clove garlic, minced
- 1 teaspoon freshly chopped sage
- - coarse salt and freshly ground black pepper, to taste
- 1/4 cup pine nuts, roasted
- 3/4 teaspoon lemon zest, grated
- 1/2 teaspoon lemon juice
How To Make green beans with a twist!

Step 1Boil the green beans in a medium pot of salted water for about 3-4 minutes, or until just tender. Drain.

Step 2Heat a medium-sized skillet over medium heat and add 1/4 t. of the olive oil. Once it's hot, add the prosciutto and cook until crispy - approx. 2-4 minutes. Set aside to drain on paper towels.

Step 3Quickly wipe out the skillet, return it to medium heat, and add 1 t. of olive oil to heat. Now you can add the green beans, garlic, sage, salt and pepper to taste. Cook until the beans begin to brown up a bit.

Step 4Add your roasted pine nuts, prosciutto, and lemon zest and stir together. As you serve, you can squeeze a bit of fresh lemon juice over it. Enjoy!
