Summer is here and fresh veggies are in abundance!!!!! What better way to use them than in a fresh salsa to serve with chips or on chicken, pork or fish. Use pineapple instead of adding sugar, and using green tomatoes in a completely different style

Ingredients
- 1 medium white onion chopped
- 2 small hot peppers, your choice, chopped
- 1/2 large bell pepper chopped
- 2 medium sweet banana peppers, chopped
- 2 large green tomatoes, chopped
- 2 large red tomatoes, chopped
- 1 large ear of fresh corn, cut off the cob
- 1/2 cup chopped pineapple
- 1 teaspoon tajin seasoning
- 2 tablespoons red wine vinegar
How To Make fresh corn and green tomato salsa

Step 1Chop onions, all peppers, add to large bowl

Step 2Chop green, and red tomato, separate, add to bowl

Step 3Microwave ear of fresh corn in husk for 2 min, shuck and cut from cob, add to bowl

Step 4Chop pineapple, add to bowl

Step 5Add Tajin seasoning and red wine vinegar. Mix well, refrigerate for at least 1 hour
