Delicious fresh fire roasted corn salsa, fantastic as a topping for meats, chicken, sea food, Mexican food, as a side, good on shrimp and grits, or just as a dip with tortilla chips. I personally like it as a topping with cauliflower waffles

Ingredients
- 3 - ears of fire roasted corn, shucks removed and corn stripped from cob
- 3 medium red tomatoes diced
- 2 medium sweet or banana peppers chopped
- 2 medium hot jalopeno or hot banana peppers
- 3 large green onions, tops and bottoms chopped
- 1 teaspoon chopped garlic
- 2 tablespoons olive oil
- 4 tablespoons red wine vinegar
- 2 teaspoons chipotle chili powder
- 4 tablespoons parsley flakes
- 2 teaspoons tajin classic seasoning
- 1 teaspoon cumin
- 1 tablespoon lime juice
- - salt to taste
How To Make fire roasted corn salsa

Step 1Roast corn in shucks on grill or open fire till black, remove shucks and strip corn from cob (corn should be light brown)

Step 2Chop tomatoes, peppers, onions, add to bowl with corn.

Step 3add remaining ingredients, taste, add salt to taste. Chill for at least a hour or longer for ingredients to come together. Enjoy!!!!
