country style green beans, ham & new potatoes

Everyone has their own recipe for cooking fresh green beans and this is mine. It's a little kicked up and a lot delicious. I know you'll love it.

Ingredients

  • 1 large bunch of fresh green beans, cleaned and snapped
  • 1 large onion, halved and sliced thin
  • 1 bunch green onions, sliced thin
  • 1 medium green bell pepper, chopped
  • 1 tablespoon bacon grease
  • 3-4 cups chicken stock
  • 1/4 cup beer (or more to taste)
  • 1/2 pound ham seasoning
  • 1 tablespoon dried parsley
  • 1-2 teaspoon creole seasoning
  • 1 tablespoon fresh ground black pepper
  • 1 teaspoon salt
  • 8-10 small new potatoes, washed

How To Make country style green beans, ham & new potatoes

  • Step 1
    In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
  • Step 2
    Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
  • Step 3
    Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
  • Step 4
    Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
  • Step 5
    NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.
