baked eggplant
This is a recipe my mother used. It's very easy to make and the results are delicious. As a kid this is the only way I would eat eggplant. This was so good that I didn't even want to try any other recipe. Now days I have many good recipes that I use but this was my first and favorite recipe.

Ingredients
- 1 large eggplant
- 1 tablespoon butter, melted
- 1/2 cup milk
- 1 large egg, beaten
- - garlic salt, to taste
- - cracker crumbs
How To Make baked eggplant

Step 1Peel and slice the eggplant. Cook in a little water until tender and drain off water.

Step 2Mash up the cooked eggplant and mix with butter, milk, egg, and garlic salt. Put mixture into a casserole dish.

Step 3Cover top with cracker crumbs and dot with butter. Bake at 400-450° until brown on top.
