Ingredients
- 1/2 cup chopped onion
- 2 tablespoons olive oil
- 1 cup raw white rice ( not instant rice )
- 1 cup chopped green or red bell pepper
- 2 - 4 teaspoons chili powder
- 1 cup diced canned tomatoes with liquid
- 1 teaspoon salt
- 2 cups water
- 1/2 teaspoon chicked or vegetable broth
How To Make spanish rice

Step 1In a medium saucepan with a tight fitting lid, saute the onion in the olive oil over medium heat until softened about 5 minutes.

Step 2Stir in the remaining ingredients.

Step 3Bring to a boil then reduce the heat to a low simmer, covered for 20 minutes or until all the liquid is absorbed and the rice is cooked.
