This spanish rice goes great with steak, pork chops, or chicken.

Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • 1 cup raw white rice ( not instant rice )
  • 1 cup chopped green or red bell pepper
  • 2 - 4 teaspoons chili powder
  • 1 cup diced canned tomatoes with liquid
  • 1 teaspoon salt
  • 2 cups water
  • 1/2 teaspoon chicked or vegetable broth

How To Make spanish rice

  • Step 1
    In a medium saucepan with a tight fitting lid, saute the onion in the olive oil over medium heat until softened about 5 minutes.
  • Step 2
    Stir in the remaining ingredients.
  • Step 3
    Bring to a boil then reduce the heat to a low simmer, covered for 20 minutes or until all the liquid is absorbed and the rice is cooked.
