This spanish rice goes great with steak, pork chops, or chicken.

Ingredients

1/2 c
chopped onion
2 Tbsp
olive oil
1 c
raw white rice ( not instant rice )
1 c
chopped green or red bell pepper
2 - 4 tsp
chili powder
1 c
diced canned tomatoes with liquid
1 tsp
salt
2 c
water
1/2 tsp
chicked or vegetable broth

Step-By-Step

1In a medium saucepan with a tight fitting lid, saute the onion in the olive oil over medium heat until softened about 5 minutes.
2Stir in the remaining ingredients.
3Bring to a boil then reduce the heat to a low simmer, covered for 20 minutes or until all the liquid is absorbed and the rice is cooked.
