Ingredients For rice & leek bake

  • 500 g
    sliced leeks
  • 400 g
    ground lamb
  • 1 lg
    onion, diced
  • 200 g
    rice, long grain
  • 1 1/2 pt
    lamb stock
  • 1/2 tsp
    sea salt
  • 1/4 tsp
    black pepper
  • olive oil, virgin

How To Make rice & leek bake

    Preheat oven to 350 degrees F.

    In a frying pan add olive oil and leeks, and fry until the leeks start to brown.

    Next add the onions and the ground lamb, fry until everything is browned; stirring constantly.

    Now add the rice and stir well, you want the rice to be coated in all the juices.

    Next, add the stock, salt and pepper and bring to a boil, and allow to boil for 2 - 3 minutes.

    Pour into a baking pan and place on the bottom self to bake for 1 hour. When all the liquid has evaporated and the rice is soft, it is ready to enjoy!

    Before serving, turn off the oven and open the door for 10 minutes to allow the the dish to cool.
