Ingredients
- 500 grams sliced leeks
- 400 grams ground lamb
- 1 large onion, diced
- 200 grams rice, long grain
- 1 1/2 pints lamb stock
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- olive oil, virgin
How To Make rice & leek bake

Step 1Preheat oven to 350 degrees F.

Step 2In a frying pan add olive oil and leeks, and fry until the leeks start to brown.

Step 3Next add the onions and the ground lamb, fry until everything is browned; stirring constantly.

Step 4Now add the rice and stir well, you want the rice to be coated in all the juices.

Step 5Next, add the stock, salt and pepper and bring to a boil, and allow to boil for 2 - 3 minutes.

Step 6Pour into a baking pan and place on the bottom self to bake for 1 hour. When all the liquid has evaporated and the rice is soft, it is ready to enjoy!

Step 7Before serving, turn off the oven and open the door for 10 minutes to allow the the dish to cool.
