- 1 cup onion, chopped
- 1 cup celery, chopped
- 1 cup chicken broth
- 1 cup water
- 4 ounces can mushroom stems and pieces, drained
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- 1/4 teaspoon pepper
- 1 cup long-grain brown rice, uncooked
- 1 cup fresh parsley, chopped

Step 1Combine the first 8 ingredients in a large saucepan; bring to a boil.

Step 2Stir in rice; cover; reduce heat, and simmer for 45 minutes of until the rice is tender and the liquid is absorbed.

Step 3Stir in the parsley. Serve immediately.
