Ingredients

  • 3 large egg yolks
  • 1 teaspoon lemon juice
  • 1 tablespoon white wine vinegar
  • 1 teaspoon sugar
  • 1 1/2 cups vegetable oil
  • - salt and white pepper to taste

How To Make homemade mayonnaise (the city tavern recipe)

  • Step 1
    Combine the egg yolks, lemon juice, vinegar and sugar in a blender or food processor. Being blending on high speed and whip until thick and light yellow in color.
  • Step 2
    Pouring in a thin, steady and slow stream, add in the oil continuing to blend on high.
  • Step 3
    Season with salt and white pepper and transfer to a storage container or serving bowl. Cover and store in the refrigerator for up to 3 days.
