garden special sauce
I got this recipe from my ex-mother in law, and it's one of my favorite tomato sauces. It's great on pasta, as a topping for baked fish or with chicken parmesan. Great way to use some of those tomatoes from your garden!

Ingredients
- 4 quarts ripe tomatoes
- 1 quart celery
- 1 quart onions, yellow, medium
- 6 - sweet bell peppers
- 3 tablespoons salt
- 2 tablespoons sugar
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 quart water
How To Make garden special sauce

Step 1Dice peppers, onions and celery. You may use the coarse stalks and leaves if you desire. Place in large stock pot on stove and add the quart of water. Cook for 20 minutes over medium heat.

Step 2Peel and cut up tomatoes and add to stock pot. Add salt, sugar, and herbs. Bring to a boil.

Step 3Place in hot, sterilized quart canning jars and process in boiling water bath for 40 minutes.
