dressing essentials: warm apricot/mustard dressing
Easy/Peasy but oh so tasty… After making several batches of this dressing, I finally got it right by adding some apricot perseveres, and they perfectly balanced the sweet with the tart. This dressing would be at home drizzled over grilled chicken, or a slab of ribs; however, my favorite way to use this is warm and drizzled over a plate of greens, chopped veggies, and sliced tomatoes. FYI: This dressing tastes better the next day. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1/4 cup olive oil, extra virgin variety
- 2 cloves baked garlic, smashed
- 2 tablespoons rice wine vinegar
- 2 teaspoons whole grain dijon mustard
- 1 1/2 tablespoons apricot preserves
- 1/2 teaspoon salt, kosher variety, or to taste
- 1/2 teaspoon white pepper, freshly ground, or to taste
- 1/4 teaspoon crushed red pepper flakes

Step 2Here is the mustard that I used for this dressing… it was awesome.

Step 3Make sure that you use baked garlic… raw garlic is too strong, and will overpower the dressing.

Step 4Since this, as most dressings, uses extra-virgin olive oil, choose the best that you can find.

Step 5If you want it sweeter, then add a bit more apricot preserves. If you want it a bit hotter, add more red-pepper flakes. A bit more tangy... add more vinegar. Have fun with it. That is what cooking is all about.

Step 6Gather your Ingredients (mise en place).

Step 7Place all the ingredients into the bowl of a mini-prep, fitted with a s-blade.

Step 8Chef’s Note: You could also do this manually, using a whisk.

Step 9Use 1-second pulses, until all the ingredients are combined.

Step 10Store in a sealed, non-reactive container, in a cool, dry place until ready to use.

Step 12When ready, place the dressing in a small saucepan and heat up until warm (not hot).

Step 13Drizzle over a nice salad, or even a pile of smoked ribs. This dressing is very versatile. Enjoy.
