·3 large fresh figs, cleaned, ends removed, coarsley chopped
·1 cup honey, wildflower or your favorite
·1 small lemon, juiced, zest thinly sliced
·1/4 cup blanched almonds, coarsely chopped
·1 tsp fresh ground cinnamon
·1 pinch sea salt
·1 vanilla bean, scraped for seeds
How to Make Fig Jam
- Into a large pot add the figs, honey, lemon juice, lemon zest, ground cinnamon, salt and vanilla bean seeds: bring to a boil.
- Reduce the heat and simmer 1 hour, stir frequently while simmering.
- When the jam has thickened add in the nuts and continue to simmer for 10 - 20 minutes longer.
- Once the marmalade has cooled pour into a sterilized jar.
