I love jams, especially fig jam. This is a lovely alternative to the orange fig jam I usually enjoy. I hope that you will enjoy this quick and easy to make treat.

Ingredients
- - 3 large fresh figs, cleaned, ends removed, coarsley chopped
- - 1 cup honey, wildflower or your favorite
- - 1 small lemon, juiced, zest thinly sliced
- - 1/4 cup blanched almonds, coarsely chopped
- - 1 tsp fresh ground cinnamon
- - 1 pinch sea salt
- - 1 vanilla bean, scraped for seeds
How To Make fig jam

Step 1Into a large pot add the figs, honey, lemon juice, lemon zest, ground cinnamon, salt and vanilla bean seeds: bring to a boil.

Step 2Reduce the heat and simmer 1 hour, stir frequently while simmering.

Step 3When the jam has thickened add in the nuts and continue to simmer for 10 - 20 minutes longer.

Step 4Once the marmalade has cooled pour into a sterilized jar.
