slow cooker apple butter

This is my recipe for a smooth, delicious and not too heavily spiced apple butter. If you like more spice flavor, you may double the ground cloves, allspice and/or nutmeg.

Ingredients

  • 5 pounds apples, peeled, cored & cut into chunks (approx.)
  • 2 cups white granulated sugar
  • 1 cup brown sugar, lightly packed
  • 2 teaspoons ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/2 teaspoon apple cider vinegar (i use raw, unfiltered organic)
  • 1/4 teaspoon salt

How To Make slow cooker apple butter

  • Step 1
    Process apple chunks, in batches, in food processor until finely chopped, emptying each batch into bowl of slow cooker.
  • Step 2
    Set slow cooker on "high," then add all remaining ingredients; stir until well combined.
  • Step 3
    Place lid on slow cooker; cook on high for about 3 hours, stirring every half hour or so.
  • Step 4
    Apple butter should be brown and thick. For perfectly smooth apple butter, use immersion blender when it's almost finished cooking.
  • Step 5
    To can, immediately ladle into hot, sterilized jars; place sterilized lids on jars and screw on rings; process in boiling water bath 10 mins.
  • Step 6
    To freeze, ladle mixture into a large bowl, cover and refrigerate until mixture is cold (I let it chill overnight,) then spoon into small freezer containers or freezer bags.
  • Step 7
    NOTE: I've found that there is variation in cooking time and the texture of the apple butter depending on the variety of apple used - adjust accordingly.
