betty's eggless mayonnaise
Mayonnaise from an old recipe when eggs were scarce (WW1). Tangy and so fast to make!

Ingredients
- - 1/2 teaspoon salt
- - 1/2 teaspoon dry mustard
- - 1/2 teaspoon pepper (or less)
- - 3 - 4 tablespoons evaoprated milk - be sure to shake the can well first
- - 1/4 cup mild oil (i like rice bran oil or a light fruity olive oil)
- - 2 tablespoons vinegar - you can be creative here if you wish. don't use balsamic though!!

Step 1In a bowl combine the seasonings and the milk. Gradually add the oil with a beater and mix. Beat in the vinegar, if it gets to thick - add a little more milk.
