Ingredients
- 1 package orzo, cooked drained
- 1 package one each; red and yellow tomatoe
- 1/2 cup each; red onion, orange bell pepper, peppadew peppers
- - kalamata olives
- - feta cheese
- - garbanzo beans
- - pinch fresh diced parsley
- - cucumber diced
- - salami cubes ( if using a as a main dish)
- DRESSING
- 1/2 cup olive oil
- 1/4 cup lemon juice
- - fig vinegar or apples cider vinegar ( to taste-adds tang)
- pinch pinch each; salt, pepper, garli
- 1 tablespoon sugar
How To Make mediterranean orzo salad

Step 1After orzo has cooled, combine all diced vegetables.

Step 2Add feta closer to time to serve as well, the dressing. Tweek dressing for your own taste. Can also substitute the fig oil for balsamic vinegar. Serving dressing on side allows for individual taste.

Step 3A variety of olives makes for a beautiful dish!
