This is just a very refreshing salad that will go with just about any dish. I grilled a couple endive just because I had the grill going for some steaks

Ingredients
- 1 bunch red leaf lettuce
- 1/2 - cucumber seeded and sliced
- 1/2 - red bell pepper chopped
- 1 - roma tomato seeded and diced
- 1/2 - red onion diced
- 4 - endive halfed and grilled
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons apple cider vinegar
- - sea salt
- - fresh cracked black pepper
- 1 tablespoon capers
How To Make summer salad

Step 1Wash and tear red leaf lettuce discarding hard ribs

Step 2Clean and cut, slice, dice, rest of veggies, except endive and build salad

Step 3Cut endive in half, brush with olive oil, sprinkle coarse sea salt, grill on high heat to sear endive about 2 minutes

Step 4Dress and mix salad with olive oil, vinegar, salt and pepper, and capers

Step 5Add grilled endive and serve
