May not take 45 mins., but the pomegranate takes forever to de-seed. I freeze my cranberries and omit the pomegranate if I can't find any @ that time of the year.

Ingredients

1 c
whole cranberries, shredded
1
pomegranate, seeded
1
orange, zested & then peeled and diced
2
granny smith aplles, cored & diced
1
lime, zested & squeezed juice
1 Tbsp
honey

How to Make Cranberry/Pomegranate Salad

Step-by-Step

  • 1Peel pomegrante & de-seed.(Score about 2mm around the middle and carefully pull apart. Seed side in your hand, take a wooden spoon and hit the skin all the way around. Do it to the next half. Pick out flesh and membranes.)
  • 2Zest orange. Peel it. Then dice up
  • 3Either in your home electric shredder, coffee grinder, or salad shooter, shred or grind up cranberries. I freeze mine and take them straight from the freezer.
  • 4Wash apples, core them, slice and dice into bite size pieces.
  • 5Put lime into microwave for 20 secs., zest and squeeze. (Microwaving makes it easier to get all the juice.
  • 6Mix all the ingredients together with a heaping tablespoon of honey.
