summer tomato plant salad!from my own plants!

I have lovely tiny tomato plants on my balcony and try to find fresh ways to use them. I sometimes cut them in half in blending into a salad pasta dish or i used them whole with fresh basil and olive oil and selection of cheese like mozerella provolone or some great smoked gouda. Delicious.. and filling!

Ingredients

  • 16-20 sprigs fresh baby tomatoes any kind
  • 1 bottle cilantro dressing ( my fav trader joes)
  • 10 sticks baby carrots chopped or diced small
  • 1/2 stick cheddar cheese or slices chopped up . i like cubed
  • 2 stalks green onion or chives
  • 2 stalks celery chopped thinly
  • 2 cups ziti cooked drained n cooled
  • 3 - fresh basil leaves chopped
  • 1 tablespoon oregano
  • 1 tablespoon thyme, rosemary, garlic, pepper
  • 2 teaspoons salt or more if you like it.

How To Make summer tomato plant salad!from my own plants!

  • Step 1
    use ziti or fav pasta, cook to package instructions, but do not over cooked, FIRMER IS BETTER, drain , cool.. set aside.
  • Step 2
    chopped all vegetables ( not tiny tomatoes) and make cheese into chunks, add more if you desire or other flavors of cheese,.
  • Step 3
    In a large bowl place the cooled pasta around 2 cups, Add spices, vegetables and add around 3/4 cup of cilantro dressing. Mix well lifting up the ingrediants till covered. I added about 3/4 cup of sour cream as well. mix all. fold in baby tomatoes last top with fresh pepper and chives or green onion. Serve chilled Serves about 8 servings. Great salad meal or side dish with other vegetable or hotdogs.
