whiney summer salad

This is a recipe I developed after buying a quart of salad from a grocery store deli one spring day over 20 years ago. It's wonderfully easy.

Ingredients
- 3 - cucumbers, sliced, or diced
- 1 large onion, sliced thinly
- 3 - tomatoes, diced into bite-sized pieces
- 1 - bell pepper, orange, yellow, red or green, diced into bite-sized pieces
- DRESSING
- 1 clove finely minced garlic
- 1/4 cup olive oil, extra virgin
- 1/2 cup red wine vinegar
- 1/4 cup water
- 1/4 teaspoon salt and pepper to taste, opt.
- 1/4 cup sugar, or artificial sweetener
How To Make whiney summer salad

Step 1Prepare vegetables into bite-sized pieces.

Step 2Prepare dressing by whisking together all listed dressing ingredients. You can place dressing ingredients in a dressing shaker, or capped quart jar, and shake well.

Step 3Pour onto salad immediately. Toss vegetables with dressing, and serve in salad bowls if desired.
