This is a recipe I developed after buying a quart of salad from a grocery store deli one spring day over 20 years ago. It's wonderfully easy.

Ingredients For whiney summer salad

  • 3
    cucumbers, sliced, or diced
  • 1 lg
    onion, sliced thinly
  • 3
    tomatoes, diced into bite-sized pieces
  • 1
    bell pepper, orange, yellow, red or green, diced into bite-sized pieces
  • DRESSING
  • 1 clove
    finely minced garlic
  • 1/4 c
    olive oil, extra virgin
  • 1/2 c
    red wine vinegar
  • 1/4 c
    water
  • 1/4 tsp
    salt and pepper to taste, opt.
  • 1/4 c
    sugar, or artificial sweetener

How To Make whiney summer salad

  • 1
    Prepare vegetables into bite-sized pieces.
  • 2
    Prepare dressing by whisking together all listed dressing ingredients. You can place dressing ingredients in a dressing shaker, or capped quart jar, and shake well.

    Pour onto salad immediately. Toss vegetables with dressing, and serve in salad bowls if desired.
