This is an excellent Springtime dressing for your favorite salads. Using avocado; as opposed to standard mayonnaise just takes it over the top, and the addition of honey gives it a fresh Spring taste. So yummy. So, you ready… Let’s get into the kitchen.

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 cloves baked garlic
  • 1/2 medium ripe avocado
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey, or to taste
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste

How To Make lite as springtime balsamic avocado vinaigrette

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients.
  • Step 3
    Place the garlic on piece of parchment paper, and drizzle with a bit of olive oil.
  • Step 4
    Twist the parchment paper up, and place in a preheated 350f (175c) oven for fifteen minutes.
  • Step 5
    Add all the ingredients (including the baked garlic) into a prep bowl, fitted with an S-blade.
  • Step 6
    Blend until smooth.

    Chef’s Note: Stop and check the seasoning: Adding more salt, pepper, or honey according to taste.
  • Step 8
    Cover and allow to rest in the refrigerator for 1 hour before using.
  • Step 9
    Chef’s Note: This dressing will last for 3 to 4 days in the fridge, if tightly covered.
  • Step 10
