This is an excellent Springtime dressing for your favorite salads.

Using avocado; as opposed to standard mayonnaise just takes it over the top, and the addition of honey gives it a fresh Spring taste. So yummy.

So, you ready… Let’s get into the kitchen.

  • 1/4 c
    balsamic vinegar
  • 2 clove
    baked garlic
  • 1/2 medium
    ripe avocado
  • 1/4 c
    extra virgin olive oil
  • 1 Tbsp
    honey, or to taste
  • ·
    salt, kosher variety, to taste
  • ·
    black pepper, freshly ground, to taste

How to Make Lite as Springtime Balsamic Avocado Vinaigrette


  2. Gather your ingredients.
  3. Place the garlic on piece of parchment paper, and drizzle with a bit of olive oil.
  4. Twist the parchment paper up, and place in a preheated 350f (175c) oven for fifteen minutes.
  5. Add all the ingredients (including the baked garlic) into a prep bowl, fitted with an S-blade.
  6. Blend until smooth.
  7. Chef’s Note: Stop and check the seasoning: Adding more salt, pepper, or honey according to taste.
  8. Cover and allow to rest in the refrigerator for 1 hour before using.
  9. Chef’s Note: This dressing will last for 3 to 4 days in the fridge, if tightly covered.
  10. Keep the faith, and keep cooking.
