This is an excellent Springtime dressing for your favorite salads. Using avocado; as opposed to standard mayonnaise just takes it over the top, and the addition of honey gives it a fresh Spring taste. So yummy. So, you ready… Let’s get into the kitchen.

Ingredients
- 1/4 cup balsamic vinegar
- 2 cloves baked garlic
- 1/2 medium ripe avocado
- 1/4 cup extra virgin olive oil
- 1 tablespoon honey, or to taste
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste

Step 2Gather your ingredients.

Step 3Place the garlic on piece of parchment paper, and drizzle with a bit of olive oil.

Step 4Twist the parchment paper up, and place in a preheated 350f (175c) oven for fifteen minutes.

Step 5Add all the ingredients (including the baked garlic) into a prep bowl, fitted with an S-blade.

Step 6Blend until smooth.

Step 7Chef’s Note: Stop and check the seasoning: Adding more salt, pepper, or honey according to taste.

Step 8Cover and allow to rest in the refrigerator for 1 hour before using.

Step 9Chef’s Note: This dressing will last for 3 to 4 days in the fridge, if tightly covered.
