Ingredients
- VINAIGRETTE
- 2 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon dried mint, crushed
- 1 teaspoon italian seasoning
- 1/4 teaspoon ground himalayan sea salt, or to taste
- 1/4 teaspoon freshly ground black pepper, or to taste
- 1/4 teaspoon honey
- SALAD
- 2 1/2 cups (1 large) english cucumber, washed and quartered
- 1 cup cherry tomatoes, washed and halved
- 1/2 cup red onions, sliced (lyonnaise cut) and halved
- 1/2 cup red peppers, finely diced
- 1/2 cup orange peppers, finely diced
- 2 tablespoons parsley, chopped
- 1 1/2 cups feta cheese (about 7 oz.), diced
How To Make israeli salad

Step 1In a small bowl, combine all the vinaigrette ingredients; whisk until blended and set aside.

Step 2In a large bowl, combine cucumber, tomatoes, red onions, peppers and parsley; toss well.

Step 3Pour vinaigrette over the vegetables and toss again. Add feta cheese and gently mix until well incorporated.
