Green Pea Salad

My wife's mom used to make this when she was growing up. This was her memory of what was included in the salad with some adjustments. I like this made with LeSueur Peas but any green peas will do.

  • 3 can(s)
    english peas, drained
  • 1 small
    jar pimintos
  • 1 stalk(s)
    celery, chopped fine
  • 3 Tbsp
    sweet relish
  • 2
    hard boiled eggs, diced
  • 1/4 c
    cheddar cheese, grated
  • 2
    green onions, chopped
  • 1/2 c
    mayonnaise, + more to taste
  • 1 Tbsp
  • 1 Tbsp
  • ·
    salt and pepper, to taste

How to Make Green Pea Salad


  1. In a medium bowl mix together the peas, pimentos, celery, green onion, and egg.
  2. Add the cheese, relish, mayonnaise, mustard, sugar, salt and pepper. Mix well and adjust these ingredients to taste.
  3. Transfer the salad to a serving dish and garnish with a little paprika. Enjoy!
