green pea salad
My wife's mom used to make this when she was growing up. This was her memory of what was included in the salad with some adjustments. I like this made with LeSueur Peas but any green peas will do.

Ingredients
- 3 cans english peas, drained
- 1 small jar pimintos
- 1 stalk celery, chopped fine
- 3 tablespoons sweet relish
- 2 - hard boiled eggs, diced
- 1/4 cup cheddar cheese, grated
- 2 - green onions, chopped
- 1/2 cup mayonnaise, + more to taste
- 1 tablespoon mustard
- 1 tablespoon sugar
- - salt and pepper, to taste
How To Make green pea salad

Step 1In a medium bowl mix together the peas, pimentos, celery, green onion, and egg.

Step 2Add the cheese, relish, mayonnaise, mustard, sugar, salt and pepper. Mix well and adjust these ingredients to taste.

Step 3Transfer the salad to a serving dish and garnish with a little paprika. Enjoy!
