Now's the time to take advantage of the great supply of cucumbers and watermelon this time of year, the "dog days" of August! This salad is cool and refreshing - even your kids will love it - but it's best eaten the same day.

Blue Ribbon Recipe

A cool and refreshing salad with a Mediterranean flair for summer. The dressing is very tangy which is a wonderful contrast to the sweet watermelon. We loved the addition of diced cucumber too. But our favorite part was the broken-up pieces of Feta cheese throughout. All the flavors meld together to create a refreshing summer salad.

I love how the tangy savory flavor plays off the sweetness of the melon. Feel free to substitute olives with raisins or fresh blueberries--whatever will make your family eat salad! Enjoy!
