cucumber and onion salad

This is a side dish that was first made by my great grandmother, handed down through the generations and now made by me, sometimes with my own granddaughter. The onions get very mellow over the days when you wait for this salad to be ready. A great side dish also if you are on a diet and it can be 0 points made with low/no calorie sweetener.

Ingredients
- 15 small kirby cucumbers
- 1 large vidalia onion
- 1 cup water
- 1 cup vinegar
- 1/2 cup sugar or sugar substitute
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 4 teaspoons oil
How To Make cucumber and onion salad

Step 1Peel cucumber and thinly slice. Slice onion very thin. Mix other ingredients in large bowl with waterproof, tight lid or waterproof storage container.

Step 2Mix all ingredients together and place in refrigerator. Stir or toss container to stir several times a day for 2 or three days until cucumbers and onions are mellow and pickled. Serve as a side dish.
