Creamy Yogurt Cucumber Salad

2 largeenglish cucumbers
2-1/2 tspkosher salt, divided
1 cplain greek style yogurt
3 Tbspseasoned rice vinegar
1 clovegarlic, minced
1 Tbspfresh dill, chopped or 1 tsp dried
How to Make Creamy Yogurt Cucumber Salad
- Peel and thinly slice cucumbers. Put into a colander and sprinkle with 2 tsp salt. Allow to drain at least 30 minutes.
- For the dressing: In a large bowl combine the yogurt, 1/2 tsp salt, vinegar, sugar, garlic, and fresh dill. Mix well.
- After the cucumbers have drained, shake off the excess moisture and mix into the dressing. Refrigerate until ready to serve. Enjoy a real treat.
