creamy yogurt cucumber salad
This easy recipe combines yogurt and cucumbers into a delicious and refreshing salad. I make it with home made Greek style yogurt and fresh cucumbers from the garden. My family loves this and some who never liked cucumber salad say this is great.

- 2 large english cucumbers
- 2-1/2 teaspoon kosher salt, divided
- 1 cup plain greek style yogurt
- 3 tablespoons seasoned rice vinegar
- 1/2 teaspoon sugar
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped or 1 tsp dried
How To Make creamy yogurt cucumber salad

Step 1Peel and thinly slice cucumbers. Put into a colander and sprinkle with 2 tsp salt. Allow to drain at least 30 minutes.

Step 2For the dressing: In a large bowl combine the yogurt, 1/2 tsp salt, vinegar, sugar, garlic, and fresh dill. Mix well.

Step 3After the cucumbers have drained, shake off the excess moisture and mix into the dressing. Refrigerate until ready to serve. Enjoy a real treat.
