Made a double Recipe to feed a Group Gathering! My friends loved it. Summer salad that tasted Fresh and tangy!

Ingredients

  • 2 cans chickpeas-rinsed and drained
  • 2 medium cucumbers sliced - quartered or halved
  • 1 pint cherry tomatoes-halved
  • 2 cans black olives-drained and sliced
  • 1 pint mediterranean feta
  • 1/2 small red onion- mini diced
  • DRESSING: LEMON JUICE, MINCED GARLIC,OLIVE OIL, SALT PEPPER
  • 6 tablespoons olive oil
  • 6 tablespoons lemon juice
  • 3 cloves garlic-pressed or diced

How To Make chickpea salad w/ cucumber tomatoes and feta

  • Step 1
    Combined all ingredients in large resealable bowl. Add dressing ingredients in a small glass jar. I use an empty ranch dressing jar and shake and pour and toss until salad is coated nicely. Chill 2 hours before serving.
