betty's chick pea and feta cheese salad

A simple salad, filled with chick peas (garbanzo beans), coriander (cilantro) and Greek style feta cheese covered in a lemony tangy dressing. This can be made ahead of time or served straight away. I always serve this with crusty bread as to not waste the dressing as it tastes so good.

Ingredients

  • 2 cups tinned chick peas (garbanzo beans) rinsed well and well drained
  • 1 red onion, thinly sliced (optional)
  • 1 bunch of coriander (cilantro), well washed
  • 300 - 400 grams good quality feta cheese (greek style - hard) about 11 ounces
  • 4 tablespoons lemon juice
  • 1/4 cup good quality olive oil
  • pepper to taste (no salt as the feta is salty enough)

How To Make betty's chick pea and feta cheese salad

  • Step 1
    Slice the onions finely and well chop the coriander/cilantro. Place into a medium sized bowl and add everything else. Stir to combine and serve or refrigerate until needed. Can be made a day or two in advance.
