simon's this & that salad

This healthy salad is so filling could easily be a meal on its own. or even a great side dish. When we have guests I like to dress up my salad by adding crumbled bacon bits, homemade croutons, crumble feta cheese, or thinly sliced parmesan cheese. Hope you enjoy this quick & easy salad as much as we do.

Ingredients

  • 2 cups lettuce, any variety, washed, dried & thinly sliced
  • 1 cup aragula, washed, dried & sliced
  • 2-3 green onions, depending on size
  • 2-3 tablespoons fresh dill &/or parsley, fine chopped
  • 2 celery stalks, sliced
  • 1 cup mix veggies, steamed (carrots, corn, peas, chopped peppers
  • 1 large tomato, coarsly chopped or a few cherry tomatoes, split in half
  • 1 cup roasted chicken breast, turkey, ham or mix, chopped
  • 1-2 small barley rusks, crumbled
  • salt & freshly ground pepper to taste
  • THE FOLLOWING ITEMS ARE ADDED IF WE HAVE & HIS LIKES, THE DAY HE IS MAKING HIS SALAD
  • 1 cup feta cheese, crumbled
  • 2 tablespoons capers, rinsed & drained
  • kalamata olives, pitted & sliced
  • bacon, cooked & crumbled
  • any leftover lentil salad, bean salad
  • homemade croutons
  • DRESSING: MY HUSBAND USUALLY JUST DRIZZLES THE OLIVE OIL, BALSAMIC VINEGAR WITH HONEY, SALT & PEPPER HE DESIRES. WHEN WE HAVE GUESTS MY ESTIMATED DRESSING WOULD BE
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar with honey
  • 2 teaspoons honey if you can not find balsamic vinegar with honey
  • 2 teaspoons dijon mustard (optional) my husband uses when he adds chicken or other meets

How To Make simon's this & that salad

  • Step 1
    Combine all ingredients together. Then add the dressing (or your favorite), toss & Enjoy!!!
