roasted red pepper vinaigrette

I made this up off the top of my head and the quantities are rough guesstimates as close as I remember. I made this to put on grilled romaine hearts but use on whatever you choose.

Ingredients

  • 12 ounces jar drained or 2 large fresh roasted red bell pepper
  • 2/3 cup olive oil
  • 1/3 cup seasoned rice vinegar
  • 1 tablespoon granulated onion
  • 1 teaspoon granulated garlic
  • 1 teaspoon minced ginger ( dorot gardens makes a frozen minced ginger 1 cube)
  • 1 teaspoon basil dry
  • 1 teaspoon celery seed
  • 1/2 teaspoon black pepper. fresh ground
  • 1/2 teaspoon salt

How To Make roasted red pepper vinaigrette

  • Step 1
    Add Red pepper to food processor and pulse until puréed about 5 or 6 pulses
  • Step 2
    Add all ingredients except olive oil and pulse a few time to mix
  • Step 3
    Turn processor on and slowly pour olive oil to emulsify.
  • Step 4
    Taste and adjust salt to your taste
