mixed salad with avocado dressing

This is a summer favorite of our families........reminds us of our fun Mexico trips. We love avocados & they are so good for you too.

Ingredients

  • 1 - large head of romaine lettuce torn into bite size pieces
  • 1 1/2 - avocados, cut into thick slices
  • 2 - large firm ripe tomatoes, cut into wedges
  • 3 - green (spring) onions, sliced
  • DRESSING
  • 2 tablespoons mayonnaise
  • 6 cloves garlic
  • 1/4 cup chopped onions
  • 1 tablespoon lime juice
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1 - bay leaf
  • 1/2 - avocado
  • 1/2 cup water
  • 1 cup corn oil

How To Make mixed salad with avocado dressing

  • Step 1
    To make the dressing, puree the mayonnise, garlic, onion, lime juice, thyme, salt, pepper, bay leaf, avocado and water in a blender. With the motor running, add the oil in a thin stream until the fixture forms and emulsion, about 2 minutes. I put the dressing in a clean mason jar cap it and chill till ready to use...........at least an hour to let the flavors come out.
  • Step 2
    Arrange lettuce on a pretty festive platter. Top with the avocados and tomatoes. Drizzle with the dressing, garnish with the green onions and serve immediately. Keep leftover dressing in the mason jar and keep in fridge
