Avocado and Tomato Salad

I had a bag of Romaine lettuce and mixed it in with the tomatoes and avocados. Everyone loved it!!

I got this recipe out of my grandmothers "My Great Recipes box" and tweaked it a little for my families tastes.

1 Tbsp
red wine vinegar
2 tsp
dijon mustard
1/2 tsp
salt (i omitted)
1/2 tsp
dried oregano ( i used fresh)
1/2 tsp
lemon juice
1/4 tsp
white pepper
1 clove
garlic, minced or pressed
1 1/2 tsp
olive oil
3 Tbsp
salad oil
3 medium
tomatoes, cut into bite sized pcs
1 large
ripe avocado
butter lettuce, or other soft leaf lettuce

How to Make Avocado and Tomato Salad


  • 1In a small bowl mix vinegar, mustard, salt, oregano, lemon juice, pepper, and garlic. Using a fork, gradually stir in olive oil and salad oil until well blended and slightly thick. (This much can be done ahead of time, covered and refrigerated to blend flavors; blend well with a fork before using.)
  • 2Cut tomatoes and avocado (peeled) into bite sized pcs.
    Place them in a bowl with the lettuce.
  • 3Pour dressing and mix GENTLY
  • 4For 2 servings, half the ingredients and use a small avocado.
    For 8 servings, double the ingredients.
