avocado and tomato salad

I had a bag of Romaine lettuce and mixed it in with the tomatoes and avocados. Everyone loved it!! I got this recipe out of my grandmothers "My Great Recipes box" and tweaked it a little for my families tastes. Enjoy :-)

Ingredients

  • 1 tablespoon red wine vinegar
  • 2 teaspoons dijon mustard
  • 1/2 teaspoon salt (i omitted)
  • 1/2 teaspoon dried oregano ( i used fresh)
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon white pepper
  • 1 clove garlic, minced or pressed
  • 1 1/2 teaspoons olive oil
  • 3 tablespoons salad oil
  • 3 medium tomatoes, cut into bite sized pcs
  • 1 large ripe avocado
  • - butter lettuce, or other soft leaf lettuce

How To Make avocado and tomato salad

  • Step 1
    In a small bowl mix vinegar, mustard, salt, oregano, lemon juice, pepper, and garlic. Using a fork, gradually stir in olive oil and salad oil until well blended and slightly thick. (This much can be done ahead of time, covered and refrigerated to blend flavors; blend well with a fork before using.)
  • Step 2
    Cut tomatoes and avocado (peeled) into bite sized pcs. Place them in a bowl with the lettuce.
  • Step 3
    Pour dressing and mix GENTLY
  • Step 4
    For 2 servings, half the ingredients and use a small avocado. For 8 servings, double the ingredients.
