Ingredients

  • 2 cups coarsely shredded cabbag
  • 1/2 cup sliced celery
  • 4 tablespoons each finely chopped raisins and walnuts
  • 1/4 cup low-fat plain yogurt
  • 2 tablespoons light mayonnaise
  • 1/2 teaspoon fresh lemon juice
  • 2 cups chopped apples (2 medium)
  • - salt and freshly ground pepper as needed

How To Make diabetic waldorf salad

  • Step 1
    In bowl, combine cabbage, celery, raisins and walnuts. In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season with salt and pepper to taste.
  • Step 2
    Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
