  • 2 c
    coarsely shredded cabbag
  • 1/2 c
    sliced celery
  • 4 Tbsp
    each finely chopped raisins and walnuts
  • 1/4 c
    low-fat plain yogurt
  • 2 Tbsp
    light mayonnaise
  • 1/2 tsp
    fresh lemon juice
  • 2 c
    chopped apples (2 medium)
  • ·
    salt and freshly ground pepper as needed

How to Make Diabetic Waldorf Salad


  1. In bowl, combine cabbage, celery, raisins and walnuts. In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season with salt and pepper to taste.
  2. Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
