Ingredients
- 2 cups coarsely shredded cabbag
- 1/2 cup sliced celery
- 4 tablespoons each finely chopped raisins and walnuts
- 1/4 cup low-fat plain yogurt
- 2 tablespoons light mayonnaise
- 1/2 teaspoon fresh lemon juice
- 2 cups chopped apples (2 medium)
- - salt and freshly ground pepper as needed
How To Make diabetic waldorf salad

Step 1In bowl, combine cabbage, celery, raisins and walnuts. In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season with salt and pepper to taste.

Step 2Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
