I love having light lunches and not feeling over full. Though most of the time I use oven baked chicken from leftovers. But quick and easy is as simple and 1-2-3. Always make a pretty setting at your table and if your alone, set yourself a table for one, light a candle. You are specia,l so treat yourself kind. Enjoy :

Ingredients For sweet chicken salad stuffed tomato

  • 1 can
    white meat chicken (drained)
  • 1/2 stalk
    celery stalk cut into very thin pieces
  • 1 Tbsp
    sweet gherkin pickles (diced small)
  • 2 Tbsp
    dukes mayonaise
  • 1 tsp
    guldens spicey brown mustard
  • 1 pinch
    dill weed
  • 1 lg
    beef steak tomato or 4 small totmatoes

How To Make sweet chicken salad stuffed tomato

    In a medium bowl add your drained chicken and chop to desired meat size. Add rest of your ingredients and mix to gether. Cut your large beefsteak tomato into a flower so it can be spread apart

    Add a large scoop on chicken salad to middle of the opened tomato. Place on plate with crackers and dill pickles(optional) If you wish you can always make cheese crackers
