Ingredients
- 6 ounces vermicelli noodles
- 2 cups red cabbage, core removed and thinly sliced
- 1 cup red peppers, julienned
- 1 large carrot, julienned
- 1/2 large english cucumber, peeled and julienned
- 3 cups poached chicken breasts, shredded
- 2 large green onions, thinly sliced
- 1/2 cup dry roasted peanuts, roughly chopped
- 1/4 cup sesame seeds, toasted
- 1/4 cup chopped cilantro, for garnish
- lime wedges, for serving
How To Make glass noodle salad

Step 1In a large bowl filled with very hot water, place noodles and let them soak until soft, about 3 minutes.

Step 2Using a fork or chopstick, separate them while they’re still in the water. Drain them well in a colander.

Step 3To assemble the salad… Add softened vermicelli to a large salad bowl. Add shredded chicken, cabbage, red peppers, carrots, cucumber, green onions, peanuts and sesame seeds; toss until mixed.

Step 4Sprinkle on cilantro and serve with your favorite dressing.
