Ingredients

  • 6 ounces vermicelli noodles
  • 2 cups red cabbage, core removed and thinly sliced
  • 1 cup red peppers, julienned
  • 1 large carrot, julienned
  • 1/2 large english cucumber, peeled and julienned
  • 3 cups poached chicken breasts, shredded
  • 2 large green onions, thinly sliced
  • 1/2 cup dry roasted peanuts, roughly chopped
  • 1/4 cup sesame seeds, toasted
  • 1/4 cup chopped cilantro, for garnish
  • lime wedges, for serving

How To Make glass noodle salad

  • Step 1
    In a large bowl filled with very hot water, place noodles and let them soak until soft, about 3 minutes.
  • Step 2
    Using a fork or chopstick, separate them while they’re still in the water. Drain them well in a colander.
  • Step 3
    To assemble the salad… Add softened vermicelli to a large salad bowl. Add shredded chicken, cabbage, red peppers, carrots, cucumber, green onions, peanuts and sesame seeds; toss until mixed.
  • Step 4
    Sprinkle on cilantro and serve with your favorite dressing.
