- 2 bamboo skewers, soaked
- 1/4 cup coarse sea salt

Step 1In a large pot filled with water, add salt and bring to a boil.

Step 2Insert skewers through the tails; set aside.

Step 3Drop one at a time the prepared tails in boiling salted water and cook 1 minute per ounce.

Step 4Transfer the tails to an ice water bath to stop them from cooking further.
