This was my Grandma Phillips recipe. When she needed to fill in the budget gap she made this dish.

  • 3 c
    macaroni cooked
  • 4
    large green peppers
  • 1/2 lb
    country sausage
  • 2 Tbsp
    chili sauce
  • 1 tsp
    chives chopped
  • 3/4 c
    parmesan cheese grated

How to Make Baked Peppers with Macaroni and Sausage


  1. Cut away the tops of peppers and remove the seeds and fibers. Parboil for 5 minutes, drain, and cover with cold water.
  2. Saute sausage, crumbling as it cooks, pour off excess fat, mix with drained macarone and chili sauce.
  3. Drain peppers, and fill with the sausage mixture, place in a casserol dish and cover with grated cheese and chopped chives.
  4. Pour 1/2 cup of water around peppers abd bake in a medium oven ( 350 ) until well heated and as brown on top as you like them.
