Ingredients
- 1 package gnocchi
- 1 can cannelini beans
- 1 can italian diced tomatoes
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 diced onion
- 1/2 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1/2 cup reserved water from gnocchi
- 1 teaspoon each basil oregano rosemary
- 6 ounces frozen spinach
- 2 ounces tomato paste
How To Make gnocchi and white beans

Step 1Heat oil in pan and sweat the onions and garlic

Step 2boil gnocchi as directed on package and drain reserving 1/2- 1 cup of the starch water from cooking

Step 3add gnocchi to the onion and garlic and pan fry until light golden brown.

Step 4Add in beans, tomatoes and tomatoes paste and thawed spinach. Pour 1/2 c of starch water and mix gently. It should be a bit loose but not a lot of liquid. Add more of the starch water as needed.

Step 5Simmer off for 5 minutes on low. Stir occasionally

Step 6Turn heat off and Sprinkle the grated mozzarella and parmesan on top. Cover and let sit for 5 minutes

Step 7Eat!
