Old tradition Italian gnocchi .. Italian comfort food. Packed with good for ya nutrients! Great as a side or a main dish! The ex was Italian so I had to learn or his Sicilian grandmother would shout in Sicilian at me ..

Ingredients

  • 1 package gnocchi
  • 1 can cannelini beans
  • 1 can italian diced tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 diced onion
  • 1/2 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/2 cup reserved water from gnocchi
  • 1 teaspoon each basil oregano rosemary
  • 6 ounces frozen spinach
  • 2 ounces tomato paste

How To Make gnocchi and white beans

  • Step 1
    Heat oil in pan and sweat the onions and garlic
  • Step 2
    boil gnocchi as directed on package and drain reserving 1/2- 1 cup of the starch water from cooking
  • Step 3
    add gnocchi to the onion and garlic and pan fry until light golden brown.
  • Step 4
    Add in beans, tomatoes and tomatoes paste and thawed spinach. Pour 1/2 c of starch water and mix gently. It should be a bit loose but not a lot of liquid. Add more of the starch water as needed.
  • Step 5
    Simmer off for 5 minutes on low. Stir occasionally
  • Step 6
    Turn heat off and Sprinkle the grated mozzarella and parmesan on top. Cover and let sit for 5 minutes
  • Step 7
    Eat!
