Ingredients
- 1 pound ground beef
- 2-3 medium zucchini or summer squash
- 4 - green onions, tops and bottoms
- 1/4 teaspoon ancho chili powder
- 1/4 teaspoon chipotle chili powder
- 1/2 teaspoon cumin
- 1/3 cup shredded 3 cheese blend
- 1/2 cup pepper rings
- 1/4 cup chopped onions
- 1/4 cup chopped bell pepper
- 1/4 teaspoon minced garlic
How To Make zucchini chip nacho's

Step 1Slice zucchini (summer squash) into 1/4 inch sliced, a mandolin slicer works best for this. Lay out on rack and paper towels, lightly salt and let mosture wick away while assembling remaining ingredients

Step 2Brown ground beef with chopped onions, bell peppers and spices.

Step 3On a silicone screen or aluminum foil bake zucchini slices at 400 for 10-15min till lightly browned, turn slices and bake an aditional 5-10 min

Step 4Assemble meat mixture in a flat layer on oven safe plate, sprinkle top with chopped green onions and pepper slices (hot or mild, your choice

Step 5Place zucchini slices in a single layer across the top of meat, onions and peppers

Step 6Sprinkle with cheese and place under broiler till cheese has melted

Step 7Serve with salsa (roasted corn salsa goes great) and sour cream on the side, ENJOY!!!
