Ingredients For zucchini chip nacho's

  • 1 lb
    ground beef
  • 2-3 md
    zucchini or summer squash
  • 4
    green onions, tops and bottoms
  • 1/4 tsp
    ancho chili powder
  • 1/4 tsp
    chipotle chili powder
  • 1/2 tsp
    cumin
  • 1/3 c
    shredded 3 cheese blend
  • 1/2 c
    pepper rings
  • 1/4 c
    chopped onions
  • 1/4 c
    chopped bell pepper
  • 1/4 tsp
    minced garlic

How To Make zucchini chip nacho's

    Slice zucchini (summer squash) into 1/4 inch sliced, a mandolin slicer works best for this. Lay out on rack and paper towels, lightly salt and let mosture wick away while assembling remaining ingredients

    Brown ground beef with chopped onions, bell peppers and spices.

    On a silicone screen or aluminum foil bake zucchini slices at 400 for 10-15min till lightly browned, turn slices and bake an aditional 5-10 min

    Assemble meat mixture in a flat layer on oven safe plate, sprinkle top with chopped green onions and pepper slices (hot or mild, your choice

    Place zucchini slices in a single layer across the top of meat, onions and peppers

    Sprinkle with cheese and place under broiler till cheese has melted

    Serve with salsa (roasted corn salsa goes great) and sour cream on the side, ENJOY!!!
