The best recipes come from our mothers, grandmothers and aunties. Georgina Diaz, in El Paso, Texas, is my former sister-in-law, a great cook, and I trust her judgement in all things yummy. This is a recipe her mother made often for her family. Give this recipe a try! You will love it!

Ingredients

  • 1 package corn tortillas (more if you want more)
  • 1 large can cream of chicken soup
  • 2 pounds cheddar cheese, shredded
  • 1 1/2 pounds chicken, cooked and shredded
  • 4 cans green chile (i used whole and cut into slices)...use fresh if you can
  • 1 medium onion, diced
  • 1 tablespoon tony chachere's seasoning or cholula or tabasco or both

How To Make georgina's mom's green chile casserole

  • Step 1
    Get the ingredients together.
  • Step 2
    Oil the bottom and sides of a 9x11 glass dish. Place a layer of yellow corn tortillas on the bottom of the dish.
  • Step 3
    Mix the seasonings with the cream of chicken soup
  • Step 4
    Top the tortillas with some of the seasoned cream of chicken soup.
  • Step 5
    Top with some of the shredded chicken.
  • Step 6
    Top with a little diced onion, chile, then cheese and another layer of corn tortillas. Repeat these layers ending with cheese.
  • Step 7
    Cover and bake at 375F for 45 minutes or until bubbly.
