This recipe had been shared by friends and family for many years! Try it, it's a very quick, easy and very satisfying main or side dish that's sure to please!

yield 6 - (2/3) cup each

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup long grain rice, uncooked
  • 1 medium onion, chopped (1/2 cup)
  • 2 1/2 cups water
  • 1 teaspoon salt
  • 1 - 2 teaspoons chili powder (according to ones own taste)
  • 1/8 teaspoon garlic powder
  • 1/2 cup green bell pepper, chopped
  • 1 can tomato sauce (8 ounces)
  • 1 can tomatoes(15 ounce)
  • IF YOU PREFER YOUR'S WITH MEAT, JUST PRE-BROWN 1 LB. GROUND BEEF AND ADD IT IN STEP 2

How To Make mom's best spanish rice

  • Step 1
    Heat oil in 10 inch skillet over medium heat. Cook rice and onion in oil about 5 minutes, stirring often, until rice is golden brown and onion is tender.
  • Step 2
    Stir in all remaining ingredients. Heat to boiling; reduce heat to low. Cover and simmer about 30 minutes, stirring occasionally until rice is tender.
