hunter sausages
I'm not quite sure why these are called Hunter Sausages but they taste lovely....we tweeked the amounts just a little but that's personal preference. They go down well at BBQ's.

6-8 sausages (depends on how long you make each sausage)
Ingredients
- 2 pounds (2kgs) pork butt
- 1 pound (500g) lean smoked bacon
- 1/2 cup beer or water
- 1 tablespoon whole yellow mustard seeds
- 2 teaspoons minced garlic
- 2 - 2-tsp coarsely ground black pepper
- 1 teaspoon sweet hungarian paprika
- 2 teaspoons dry mustard
- - 1-tsp kosher salt
- 1 teaspoon ground cilantro (coriander)
- 1 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground ginger
How To Make hunter sausages

Step 1Grind the meat on medium

Step 2Mix the seasoning and herbs and spices into a cup of iced water.

Step 3Combine all ingredients, mix well. Regrind on medium & stuff into casings.
