I'm not quite sure why these are called Hunter Sausages but they taste lovely....we tweeked the amounts just a little but that's personal preference. They go down well at BBQ's.

yield 6-8 sausages (depends on how long you make each sausage)

Ingredients

  • 2 pounds (2kgs) pork butt
  • 1 pound (500g) lean smoked bacon
  • 1/2 cup beer or water
  • 1 tablespoon whole yellow mustard seeds
  • 2 teaspoons minced garlic
  • 2 - 2-tsp coarsely ground black pepper
  • 1 teaspoon sweet hungarian paprika
  • 2 teaspoons dry mustard
  • - 1-tsp kosher salt
  • 1 teaspoon ground cilantro (coriander)
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon ground ginger

How To Make hunter sausages

  • Step 1
    Grind the meat on medium
  • Step 2
    Mix the seasoning and herbs and spices into a cup of iced water.
  • Step 3
    Combine all ingredients, mix well. Regrind on medium & stuff into casings.
