Ingredients
-
2 lb(2kgs) pork butt
-
1 lb(500g) lean smoked bacon
-
1/2 cbeer or water
-
1 Tbspwhole yellow mustard seeds
-
2 tspminced garlic
-
22-tsp coarsely ground black pepper
-
1 tspsweet hungarian paprika
-
2 tspdry mustard
-
·1-tsp kosher salt
-
1 tspground cilantro (coriander)
-
1 tspfreshly grated nutmeg
-
1/2 tspground ginger
How to Make HUNTER SAUSAGES
- Grind the meat on medium
- Mix the seasoning and herbs and spices into a cup of iced water.
- Combine all ingredients, mix well. Regrind on medium & stuff into casings.
