eastern style lemon chicken with veggies

This recipe is a take on the Broiled Eastern Chicken http://www.justapinch.com/me/manhall I added lemon pepper seasoning and veggies and omitted the rosemary. I love orange chicken so lemon should be just as good or better. I hope you like. Try it and comment as to how yours turned out. And remember to select the Star rating!

Ingredients

  • 2 medium pieces chicken
  • 2 large onions
  • 3 tablespoons olive oil, extra virgin
  • dash paprika, sweet mild
  • dash garlic powder
  • 2 - fresh lemons
  • Dashes - thyme, dried
  • Dashes - mccormack lemon pepper seasoning
  • 5 - baby potatoes
  • 1 package whole baby carrots
  • 2 sticks celery

How To Make eastern style lemon chicken with veggies

  • Step 1
    Thaw, Wash and pat dry 2 lg. pieces of chicken. Place in baking dish.
  • Step 2
    Marinate in refrigerator for 1 hr. In the juices of lemon along with lemon zest and herbs.
  • Step 3
    Preheat oven at 375 degrees. Drizzle top of chicken with Olive Oil then cover baking dish with aluminum foil Placing chicken in oven. Slow bake for 2 hrs. Most of the liquid will be evaporated at this pt.
  • Step 4
    Remove from oven and place washed veggies surrounding chicken covering with foil to finish cooking an additional hr. The veggies will be soft. The chicken will be fall off the bone tender and juicy with a hint of lemon in every delicious bite.
