I was running out of ideas for dinner.. I wanted something Quick,E-Z and healthy. An updated version of a childhood favorite ... this is what was for dinner that night. The Hubby and kids liked it so well it will be in the regular rotation of menues from now on !

Ingredients

  • 1 1/2 pounds lean (80%) ground beef
  • 3/4 cup rice, instant and uncooked
  • 1/2 medium red onion , minced
  • 1 tablespoon chopped garlic,from a jar
  • 1 -6oz can tomato paste, no salt added
  • 2-small cans tomato sauce, no-salt added + 3 cans water
  • 1-2 stalk celery
  • 1 large carrots, cubed
  • 1 teaspoon salt or salt subistute
  • 1/4 teaspoon ground black pepper
  • 1 small head of red cabbage, sliced

How To Make porcupines 'n cabbage

  • Step 1
    Mix Ground beef, rice, onion and garlic
  • Step 2
    Form mixture into balls a little larger than golf-ball size.
  • Step 3
    In a large skillet, brown meatballs in a small amount of olive oil on all sides. Remove and drain on paper towels. Wipe out skillet
  • Step 4
    while meatballs are browning place tomato paste, water, tomato sauce, celery, carrot,salt and pepper into blender. liquefy.
  • Step 5
    Pour tomato mixture into skillet and bring to simmer, add meatballs , and layer cabbage on top . Cover.
  • Step 6
    Simmer on low until meatballs are cooked and cabbage is semi-soft. remove lid and let liquid reduce to desired consistency.
