Once a week, I always put on a big pot of soup so that my family has a quick and easy lunch to pull from the fridge since they all come and go at different times. This is my favorite quick and easy sandwich that makes that bowl of soup a meal. So crunchy and ooey-gooey good! (Make extras because one is never enough!)

Ingredients

  • 4 slices italian bread, cut 1 inch thick
  • 4 slices mozzarella or provolone
  • 3 large eggs
  • 1/2 cup milk
  • 3/4 teaspoon italian seasoning
  • 1/2 teaspoon garlic salt
  • 2/3 cup italian seasoned bread crumbs
  • 1 large roma tomato, sliced, optional
  • - mild italian yellow pepper rings (jarred), optional
  • 1 tablespoon butter

How To Make quinn's italian grilled cheese sandwiches

  • Step 1
    Cut a 3" pocket in each slice of bread being careful not to cut all of the way through. Place a slice of cheese and tomato, if using, into the pocket.
  • Step 2
    In a bowl, beat eggs, milk, Italian seasoning, and garlic salt. Soak bread thoroughly on each side. Coat with bread crumbs.
  • Step 3
    Melt butter in pan, or use prepared griddle or panini press to cook until golden brown. Serve with fresh tomato slices and Italian yellow pepper rings.
