- 1 teaspoon olive oil, extra virgin
- 8 ounces orange roughy, red snapper, cod, or haddock fillets
- 1 tablespoon basil, fresh, chopped
- 1/8 teaspoon each salt and pepper
- 2 - plum tomatoes, thinly sliced
- 2 teaspoons grated parmesan cheese
How To Make tomato-basil baked fish

Step 1In a shallow dish, combine the lemon juice and oil. Add fish fillets; turn to coat.

Step 2Place in a greased 9-inch square baking dish. Sprinkle with basil, salt and pepper. Arrange tomatoes on top; sprinkle with Parmesan cheese.

Step 3Cover and bake at 400°F for 10-12 minutes or until fish flakes easily with a fork.
