fish & potato chowder - instant pot
I saw a recipe on the internet that gave me the inspiration for this delicious chowder. I am always on the lookout for ways to put more fish into our diet and catfish is one of my favorite fish. I also want to use recipes that can be done in the Instant Pot. I put this together using things I had on hand. It turned out to be delicious so I am sure that this will become a regular item on our table.

Ingredients
- 2 cups water
- 1 pound catfish filets, cut into chunks
- 1 cup baby potatoes, quartered
- 1 to 2 - ribs celery, thin sliced
- 1/2 cup corn kernels, fresh
- 3/4 cup diced onion
- - salt & pepper to taste
- 1/4 teaspoon garlic powder
- 2/3 cup chicken broth
- 1 or 2 slices bacon, cooked and diced
- 1-1/2 cup milk
- 1/2 cup instant potatoes
- 1 tablespoon butter
- 1 or 2 - green onions, thin sliced, for garnish
How To Make fish & potato chowder - instant pot

Step 1Put the water, fish, potatoes, celery, onions, corn, salt & pepper to taste, garlic powder, chicken broth, bacon, and milk into the Instant Pot.

Step 2Close and seal the lid.

Step 3Push the MANUAL button and set the time for 10 minutes of pressure.

Step 4Let the Instant Pot release for 5 minutes, then turn it off, and do a quick release on the remaining pressure.

Step 5When the pressure has released carefully remove the lid. Press the SAUTE button, then add the instant potatoes and butter to the Instant Pot.

Step 6Cook and stir the chowder until it thickens, garnish with green onions, and serve.
